A couple common ones are 8 bit =255, 16 bit =65535. A 16 bit single turn absolute encoder would then have a resolution of 360/65535 degrees. For a multi turn encoder, for example one that could track 10 turns, the resolution would be 10*360/65535 degrees. Whether a given encoder is accurate at a given resolution is another question.
